Les moines s’y implantèrent et la rebaptisèrent «Vallée de Dieu», ce qui donnera plus tard le nom de l’Abbaye Du Val-Dieu. L’Abbaye du Val-Dieu est la seule Abbaye belge ayant survécu à la Révolution Française. La communauté chrétienne du Val-Dieu occupe toujours les lieux et elle est unie à l’Ordre Cistercien. Les moines s’y implantèrent et la rebaptisèrent «Vallée de Dieu», ce qui donnera plus tard le nom de l’Abbaye Du Val-Dieu. L’Abbaye du Val-Dieu est la seule Abbaye belge ayant survécu à la Révolution Française. La communauté chrétienne du Val-Dieu occupe toujours les lieux et elle est unie à l’Ordre Cistercien. Les moines de l’Abbaye du Val-Dieu sont à l’origine des bières brassées aujourd’hui sur le site même, les ordres cisterciens étant connus pour leurs talents de brasseurs. Le développement de l’activité brassicole était initialement lié à la nécessité de rendre l’eau potable, cela permettait d’éviter les maladies de l’époque comme le choléra ou la typhoïde. Les moines ont étudié pendant des siècles les levures et l’histoire des différentes fermentations. Ils ont sophistiqué la production de bière, créant des recettes spéciales toujours plus élaborées. Aujourd’hui, nos bières sont inspirées des recettes originales des moines, fidèles à la tradition de la refermentation en bouteille. Comme toute bière d’Abbaye, celles du Val-Dieu sont élaborées sans ajout d’aromates, d’épices, suivant l’ancienne méthode à infusion. [H2] Les anneaux In Vinculo Pacis Depuis sa fondation en 1216, l’histoire de l’Abbaye du Val-Dieu est symbolisée par deux anneaux dont la devise est : «In Vinculo Pacis». L’histoire de cette expression latine signifie « Dans les Liens de la Paix » et est tirée de la Bible (épître aux Ephésiens). Elle rappelle que le chemin du bonheur passe par la rencontre et l’humanité. Ayez beaucoup de douceur et de patience, supportez-vous avec amour, appliquez-vous à garder l’unité de l’esprit « par le lien de la paix ». Cette paix est à trouver avec Dieu, avec son prochain et avec soi-même. Ces deux anneaux se retrouvent sur de nombreux supports dans l’Abbaye (murs, sol, vitraux, chaises, portes, âtre etc.). Ils sont également toujours présents sur le pendentif porté par les membres de la Communauté Chrétienne. Ces anneaux sont d’ailleurs un signe de distinction entre eux lorsqu’ils visitent des Abbayes « sœurs ». Nous les retrouvons aussi sur les nouvelles étiquettes des bières du Val-Dieu. [H2] L’eau et la levure Les secrets de la bière du Val-Dieu sont son eau et sa levure. En effet, l’eau provient du barrage de la Gileppe, qui est une source naturelle d’excellente qualité, située à 20-30km d’autres sources mondialement connues comme celles de Spa, Bru et Chaudfontaine. Quant à la levure, elle est gardée précieusement à l’Abbaye et est composée de champignons microscopiques (Saccharomyces cerevisiae) bénéfiques pour l’organisme humain et permettant les célèbres fermentations. Cette levure est également pleine de vitamines B et de sels minéraux et constitue un puissant antioxydant. Dans le respect des traditions, le processus de fabrication de la bière du Val-Dieu dure de 6 à 8 semaines. C’est ainsi que les hautes teneurs en alcool sont obtenues (6 % pour la bière Blonde, 8 % pour la Brune et 9 % pour la Triple) ainsi que les arômes complexes de la bière. La particularité de cette bière est qu’elle est la seule bière belge d’Abbaye brassée au sein même du monastère; là où la communauté chrétienne vit toujours.
