How is the freshness of the fish guaranteed during delivery?
Your Fresh & Wild fillets will ship fresh, never frozen. They should arrive cool to the touch on gel ice packs. Our fresh catches ship with expedited shipping and are packaged in insulated bags that keep them cool.

Where do you source your fresh fish?
We work with different fishing companies and have many locations for our Fresh & Wild catches. Your order will come with an insert that will give you details of where the product came from. Some of our most favorite catch locations are Columbia River, Salish Sea, Prince William Sound, Cook Inlet, and of course Copper River!

What steps should I take upon receiving my delivery?
Your fresh fillets can be stored in the refrigerator for up to 3 days. Upon arrival please rinse the fillets in cold water, pat dry and refrigerate. The fresh fillet can be frozen & will keep in the freezer for approximately 30 days; once thawed it should be cooked and used within 1-2 days. We recommend after rinsing the fillets and patting dry, to wrap in a plastic wrap and then in a freezer bag before freezing.

Do the Fresh & Wild fillets contain bones?
Your Fresh & Wild fish has been hand-filleted and may come with a few pin bones as these are hard to remove in fresh fish.

Are the Fresh & Wild fillets individually vacuum sealed in plastic?
Fresh & Wild fillets do not come individually vacuum sealed in their own pouches. The product is put into a plastic bag and then wrapped in butcher paper. Upon being received, the product will need to be eaten or frozen within 3 days. (Please see FAQ “what steps should I take upon receiving my delivery?” for further instructions)

What are the sizes and shapes of the fillets?
Depending on the catch, we offer 1.5lb sides, 4 oz and 6 oz fillets, and the whole fish (whole fish are headed and gutted). We hand-fillet so the shapes/sizes of the fillets will slightly vary as they go by weight. We also use as much of the fish as possible so some tail pieces may be included.

Anacortes fisherman Tom Savidge and his wife Marie built a backyard smokehouse and began selling smoked wild salmon to local taverns. With that, Specialty Seafoods (later renamed SeaBear after a Native American legend) was born…

Tavern owners loved Tom’s smoked salmon, but wished it would last longer. Tom answered this request with a new packaging method: The Gold Seal™ pouch, which preserves the salmon naturally and with no refrigeration. His patented innovation made it easy for tourists to take salmon back home and to ship across the nation.

Gerard & Dominique and their world-class lox became part of the SeaBear family. Acclaimed chefs Gerrard Parrat & Dominique Place could not find a lox they would be proud to serve in their restaurants, so they created one, modeled after the great smoked salmon of Europe.

For over 68 years, in the town where it all began—Anacortes, WA. Our local mayor Laurie Gere declared July 29th to officially be ‘SeaBear Day’ in Anacortes, which we now celebrate every year. Our team has grown to over 80 people who work at the smokehouse (a long way from the days of Tom Savidge and his backyard smokehouse!), all proudly building upon our long, rich heritage in this idyllic waterfront community, here in the heart of the Pacific Northwest.
