Fresh Hand-Picked Botanicals
We forage wild botanicals in the Wicklow mountains all year round moving with the rhythm of the seasons. What we pick goes fresh into the still within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Soft of hand and light of foot, we are always careful to never take too much from one place.
In a way each batch is like the first one we've ever made. Hand-foraged, wild ingredients. Each day, we venture into the surrounding mountains. The wild native plants we forage are fresh-distilled to capture the intrinsic nature, the essence of those mountains.

What we forage changes with the seasons. It can even change by the day depending on weather. Every day is different in the Mountains. It is different each time we turn on the still too. Our distilling methods 
can't be automated, or timed, they must 
go by taste and smell. Recipes must be 
tweaked every day to balance what is going in the still.

Wood Sorrel
Wood sorrel is a pretty, shamrock-like plant that grows in the woods and shady places of Ireland. It is one of the wild foods that was widely eaten in Ireland.FLAVORWood sorrel has sharp, tangy notes, just like lemon. In former times whenlemons were only available in winter, wood sorrel was used to make sauces, soups and as a garnish for fish including salmon and trout.FOLKLOREThe Irish for sorrel is seamsóg, or seamróg coille, shamrock of the woods. Sorrel was sometimes used in place of shamrock to pin on dresses and jackets as our national symbol on St. Patrick’s Day."

Gorse
Gorse flowers are to be found almost all year round in Ireland, but it is in April that they are at their best. Their bright yellow flowers set the Irish countryside alight. On sunny days the tropical scent of gorse flower fills the air.FLAVORGorse is a key spring botanical in our gin, it gives it a beautiful perfume and intense floral notes. The flavor and scent is similar to coconut, so much so that when coconut flavored chocolate bars first arrived in Ireland, people thought they tasted like gorse.FOLKLOREIn Ireland we say ‘when gorse is out of bloom, kissing is out of fashion’: with many different varieties, there are almost always gorse flowers in bloom, and kissing is always in fashion! Gorse had many past uses in Ireland, for dyeing fabric, medicine, building, drainage, tinder and much more. Nowadays it is not considered to be of much value. Glendalough Distillery were the first to use gorseflower as a flavor in modern times.

Scotts Pine
Scots pine was one of the most abundant trees to be found in post-glacial Ireland, colonising the landscape as the ice retreated 10,000 years ago.FLAVORWe use the needles of pine and fir trees to add citrus notes to our gins. The young needles have lemon and lime notes. Later in the year they develop orange and grapefruit notes.FOLKLOREMuch use was made of pine that had been buried and preserved for thousands of years in the bogs of Ireland. Special tools were used to locate the subterranean wood. With its resinous, citrussy oils preserved, pieces of bog pine were used as tinder, torches and candles.

Hawthorn
Hawthorn is one of the mostcommon trees in Ireland, often found growing near historic sites, holy wellsand fairy forts. We use the bright blossoms that adorn the hedgerows in the month of May, and in autumn we pick the red berries or ‘haws’. In Irish it is known as ‘an sceach geál’, the bright bush.FLAVORThe hawthorn blossoms add a sweet, almond flavor. They must be picked when they are in perfect condition which is just for a few days in May.FOLKLOREThere is a lot of superstition surrounding hawthorn because of their association with faeries(fairies). In Ireland it is common to see a lone hawthorn tree in fields andpastures. This is because it is considered very bad luck to cut down a hawthorn tree. Even in modern, cosmopolitan Ireland people are loath to touch these magic trees. In the 1990’s a proposed motorway route had to be altered as therewas a hawthorn tree in the way and no one would risk cutting it down. It was said that the faeries of Kerry would gather at this tree as they prepared to go into battle with the faeries of Connaught.

Woodruff
Woodruff is a delicate plant of spring and early summer. It is beautiful in its simplicity, with white flowers and whorled leaves. It has a long history of use in flavoring drinks and in perfumery, both for its scent and its ability to bind ingredients and make perfume last longer on the skin.FLAVORWoodruff contains coumarin, an aromatic flavor that smells similar to newmown grass or hay. The flowershave almond and vanilla-like notes.FOLKLOREThe plant was used to flavor wine. It was also dried and used to scent linen, ‘for the grateful smell and to banish insects’.

Primrose
Nothing says spring in Ireland more than a pretty bank of primroses. Wild primroses have the most exquisite scent with beautiful pale yellow, or sometimes pink petals.FLAVORThe flavor of primroses is delicate, floral, and as the name suggests, a little rose-like.FOLKLOREPrimroses are mentioned in many songs and tunes such as Lough Erin ‘s Shore, The Banks of Sweet Primroses, The Primrose Lass. The flowers were also used in manytraditions to protect and bless the cows and their milk over the coming year.

The World's Best Oak
A key influence on the flavour of our whiskey comes from the wood it has spent time in. There are countless nuances in how that wood effects and injects flavour; the straightness of the tree, the fineness of the grain, the size of the barrel or the depth of the char. 
Our wood program is a testament to our relentless pursuit of flavour.
American white oak forms the backbone of our maturation and where we venture off the beaten track is by finishing all of our whiskeys in a second (and sometimes third) very different cask. Irish, Japanese, French and Spanish oak are used to finish some of our various whiskeys. Each impart discernible, unique and exquisite flavours.

There are countless nuances in how that wood effects and injects flavour; the straightness of the tree, the fineness of the grain, the size of the barrel or the depth of the char.

US Bourbon Barrels
Our whiskeys spend a lot of their time in first-fill American white oak Bourbon casks. These 200 litre casks lay the flavour foundation that has become the backbone of the Irish whiskey taste. American oak casks impart a lot of flavour. Besides the fact that they've held Bourbon before we get them, the charred wood truly transforms new-make Irish whiskey. We use a heavy char which really brings the wood alive but also softens the liquid in its early years for a smoother mouth feel. This char adds a charcoal mellowness, the sweetness of vanilla and hint of caramel that perfectly compliment the flavours already present in the spirit. These American oak casks also bring a beautiful golden hue to the whiskey.

Spanish Oloroso Casks
Our search for the most flavourful casks in the world first took us from the Wicklow mountains to the rolling hills of Spain where we obtain Oloroso sherry casks from Montilla in the Spanish countryside. The Oloroso is a dark, fruity and nutty fortified wine from Montilla. The Oloroso that seasons our casks is made from the famed Pedro Ximénez grape. The casks are lightly toasted rather than charred. This ensures we get clearer wood flavours. After around 2 years of holding Oloroso, we inspect and choose the casks. The intense flavours these casks bring, imparts itself into our whiskey fast. Raisins, sultanas, candied peel, cinnamon, nutmeg, and Christmas pudding are all clearly discernible in the whiskey.

Single Cask
Rare casks make unique whiskeys, and our Single Cask series perfectly captures the essence of our relentless search for the finest, most flavourful casks in the world which we proudly share with you. This is an exceptional whiskey range that raises the bar on what’s possible with Irish single grain whiskeys. After over three years in a flame-charred bourbon cask, the liquids of this series are finished for around a year in 1 of 3 unique casks. Grand Cru Burgundy casks from France previously steeped in full bodied pinot noir wine, bring complexity and depth to our Irish whiskey. Canteiro aged Madeira casks from off the coast of Africa which held Madeira fortified wine, soak up and impart intense aromas and flavours created by the heat and tropical climate of their homeplace. XO (6+ years) Calvados casks from the grazed orchards of Normandy in France have formerly stowed apple brandy for over 6 years.

Japanese Mizunara
Our relentless search for the most flavourful oak in the world took us from our own wooded mountains in Wicklow to those in the volcanic north of Japan, Hokkaido. This is where we found Mizunara, the most sought-after oak in the whiskey world. As the first Irish whiskey distillery to use the rare and exotic Mizunara, we had very much ventured into the unknown. The wood is very soft and porous with a tight grain, which is good for flavour but hard to cooper and prone to leaking. Ours is brought to the south of Japan to air dry in Miyzaki before coopering at Japan's only independent cooperage. The casks are lightly charred. Mizunara packs a punch of unique, exotic and exquisite flavours. The whiskey is vivid, but delicate with seamless depth. It is vibrant, fruity, and floral on the nose, enjoying a luxuriously smooth mouthfeel with notes of dark chocolate orange, sandalwood and cinnamon. It makes for a pretty unique take on Irish whiskey.

Irish Oak
Our home is surrounded by mountains with Irish oak forests sprawling across them, and this is where our whiskey journey begins. These unique Irish oaks agive us the perfect way to get the flavour of where we’re from in Wicklow into our whiskey. The casks we have crafted are 250-liter hogsheads, slow-toasted using oak fire, then given a level 3 char. The Irish oak amplifies the flavour of the bourbon casks while adding layers of sweetness and bready, woody, earthy notes. To ensure the future of our native oak forests these trees are harvested under a Continuous Cover Forest Management System in which we plant seven saplings for every one oak tree felled. Before Ireland was known as ""the emerald isle"", it was known throughout the old world as ""the wooded isle“ and we're very excited and proud to play a part in bringing Irish oak back into use for aging Irish whiskey while helping to manage these ancient forests and doing our bit for the regeneration of these beautiful, broad-leaf, deciduous woods
