“I wrote Caledonia, in 1977 on a beach in Brittany, France, when I was genuinely homesick for Scotland. My life has always been based in Perthshire. For me, the location of Edradour, with its neat cluster of whitewashed buildings, traditional equipment and employment of ancient methods of making single malt whisky, combined with its state of the art bottling facility, typify Caledonia. This whisky has been matured for 21 years solely in a first fill Oloroso Sherry Butt, imparting great colour and character.
Distilled on 17 August 1993 and bottled on 20 August 2014. Cask No. 300. 581 bottles individually numbered.
The result is a wonderfully balanced, smooth and very complex whisky, which is delightful on the palate with a long and satisfying finish.
Bottled at Cask Strength of 58% ABV and Un-chillfiltered, in order to capture all the signature characteristics of Edradour.

This little distillery steeped in history and quietly producing world class whisky is as unassuming
and as natural as the fields and sky surrounding it. Travel with us through time and take a trip into the
origins of this special place.
The early story of whisky in Scotland is largely undocumented. It is thought that prior to the 15th
century, whisky existed for medicinal use, drinking and sharing in small gatherings. Believed to have
unique capabilities to prolong life it was called ‘Uisge Beatha’, ‘the Water of Life’. The story of
Edradour and the Distillery is intimately caught up in the dramatic history of the development of Scotch
whisky.
Before whisky became synonymous with Scotland, respected and prized throughout the globe, it was
produced on a small scale in pot stills and illegally, mostly in the Highlands.

Edradour was no different and distilled throughout the struggles between the illicit stills of the
Highlanders, who simply wished to make whisky (seen as their right) and the officialdom of the Excise
Officers, who were out to stop them avoiding duty, or tax.
With the Excise Act of 1823 encouraging licencing and reducing duty paid on spirit, it became more
attractive to move away from the illicit stills to a legal entity. As a result Edradour was duly founded
in 1825 as a cooperative of local farmers.
Edradour has always been a survivor through both lean and prosperous times and, perhaps by virtue of
its small size, has been able to more easily adapt to changing circumstances: from the original success
story of blended whisky to ownership by the New York Mafia, from large corporate ownership to a welcome
return to Scottish hands.
Today, under the keen skills of Andrew Symington, Master of the Quaich, Edradour Distillery is now
producing - along with traditional, handmade farm whisky - innovative new single malts.
Small is beautiful, after all.

[H2] Unique features
When you visit the distillery you will taste the last single malt whisky produced by hand in the smallest traditional stills in Scotland, still housed in their original farm buildings.
We consider this a triumph of the traditional art and craft of whisky production over the growing mass production trade. Unlike larger distilleries, we have no computers attached to any equipment and visitors see and smell the unique process of bringing together barley, spring water and yeast all under one roof.
Edradour is packed with Unique Features. Old small scale equipment, some of which is the last in Scotland, enables you to see how the whisky is made. Simply exposed and open to the air, visitors see the working of real Victorian whisky production happening today.
Here is just a selection of the many unique features of Edradour Distillery. Many more will be discovered on the Tour.

As you watch water, wort, wash and spirit flow around the old still house you will see this transformation taking place that has hardly changed for one hundred and fifty years.

The distillery uses a small Open Mash Tun, for mixing the malted barley and spring water, made of cast iron that is over one hundred and ten years old and in almost daily use.

The resulting wort from the Mash Tun is cooled in the Morton Refrigerator using cold water only. This is the last of its kind still working in the whisky industry.

The cooled wort is then transferred to the Oregon Pine Washbacks. Edradour has two Washbacks, both over 50 years old.

At Edradour, distilling involves our two copper stills and worm tubs. The second distillation takes place in the smallest traditional still in Scotland.

The Worm Tubs with coiled copper pipes are water cooled from the Edradour Burn and are amongst the handful remaining in Scotland.

The used barley grains, known as Draff, are shovelled out into an open cart outside the Still House.

The Draff, or used barley, is taken away each day by our local farmer where it is fed to his cattle – another old tradition at Edradour.

The spirit that will later become whisky is received into our precious spirit safe under the careful watch of our master distiller.

We have been investing substantially in the quality of the oak casks in which our Edradour spirit quietly matures. The highest quality distilled spirit maturing in quality oak wood is the perfect combination.

Edradour Single Malt Whisky is carefully distilled, matured and bottled on the premises so we can really watch that the quality remains consistently at the very best. Here Andrew Symington and Dougie Maclean open a cask of Caledonia, matured for 12 years.
